Victoria sponge contest cakes should be made using 6oz each of butter, sugar and self-raising flour, plus 3 eggs, baked in an 8-inch tin 180c or fan 160c/Gas mark 4 until golden and firm to touch with a jam filling and dusted with castor sugar. Cupcakes can be made using the same ingredients.
